What is Annatto Extract?

Annatto is an orange/red condiment and food coloring derived from the seeds of the achiote tree.  The additive is primarily used in foods for its coloring properties, creating a yellow or orange product.

The achiote tree is indigenous to Central and South America, Mexico, and the Caribbean.  The seeds contain compounds called carotenoids, which provide the vibrant color.

Annatto is often used to develop a yellow color in butter, margarine, and cheeses.  As a condiment, Annatto is used for its nutty, peppery aroma.
