What is Dipotassium Phosphate?

One of the ingredients in the Oatmilk and in the Coconut Milk is dipotassium phosphate.

Dipotassium phosphate is an inorganic water-soluble potassium salt.  The compound is created through a reaction of source of potassium such as potassium hydroxide with phosphoric acid.  Food grade phosphoric acid is derived from phosphate rocks.

Dipotassium phosphate is used in food production as a preservative, flavor enhancer, and as a source of phosphorus and potassium.
