Nutritional information is presented based on a single serving measured as one Sausage McMuffin, including the egg and cheese, but without the English Muffin. Percentage daily value (% DV) measures how much one nutrient per serving contributes to a 2,000 daily diet.

There are 340 Calories in McDonald’s Sausage McMuffin with Egg without the bread. Nearly 80% of total calories are derived from fat. Protein makes up about 18% of the total calories.

What is Sodium Citrate?

Sodium citrate – listed as an ingredient in the American Cheese – is the sodium salt of citric acid.  It’s a mild alkali that is often used to regulate acidity during the production of certain foods.  This additive is also used as an emulsifier for oils.

For example, it prevents cheese from becoming greasy when melted.  The reason it works is because the sodium acts as a substitute for the calcium that would otherwise help the cheese proteins bind.  When cheese is heated, proteins separate.

Sodium citrate acts as an emulsifier to hold the fat and water together, resulting in a smooth melted cheese without lumps or holes.  This is why sodium citrate is useful in cheese sauces, fondues, jam, ice cream, and other food.
