Diacetyl Tartaric Acid Ester of Mono- and Diglycerides (DATEM), is a synthetic food additive derived from plants and vegetable oils. The additive is often used as an emulsifier in the production of baked goods to strengthen the gluten in dough to create a springy, chewier texture in breads. It's also commonly used in other foods such as salsa, ice cream and salad dressings to help ingredients remain mixed or blended.
