Overview of Food Allergens
The most common allergens and allergic reactions are related to nine major food groups: eggs, fish, milk, peanuts, sesame, shellfish, soybeans, tree nuts, and wheat. Federal regulations require manufacturers and restaurants to declare these allergens when foods or drinks are made with the ingredient.

If the kitchen does not have a dedicated fryer, the same oil and fryer may be used to cook multiple food items such as potatoes, chicken, or fish that’s breaded or contains wheat, barley, or rye.
Although kitchen staff may follow strict food safety procedures, there is no guarantee that any item is 100% free of allergens.
