Chipotle uses a process of nixtamalization, by which the corn grain is prepared in an alkaline solution (lime mineral derived from limestone, coral, and/or shellfish), which breaks down the corn, removing the husk and releasing niacin (vitamin B3). The process makes the corn easier to digest and the nutritional content more bioavailable (easier to absorb)
