Definitions of Select Ingredients

Here are brief definitions of select ingredients that many consumers may not be aware of although common in many of the selected cereals.

  • BHT (Butylated Hydroxytoluene) is a chemically processed toluene-based food additive. It’s used in packaged cereals, crackers, and gum, among other packaged foods, to maintain freshness.
  • Brown Sugar is simply sucrose sugar blended with molasses, which gives it a distinct brown color and caramel flavor. In certain recipes, molasses is used to create a denser, slightly chewier food product compared to using white sugar. In addition, the molasses is slightly acidic which can be used for leavening when combine with a base ingredient such as baking soda.
  • Expeller Pressed refers to the process of squeezing oil from seeds (compared with using chemicals to extract the oil).
  • Malt Flavor is generally derived from toasting and caramelizing sugars extracted from malted barley grains.
  • Tocopherols refer to a group of fat-soluble antioxidants that react with oxygen and block oxidation of fats, which in turn extends the shelf life of processed foods.

Extra Toasted Almond granola also contains a higher amount of sodium (220 milligrams) compared with the other cereals under review.
