What are Food Allergens?

Federal regulations have identified nine major food allergens: eggs, fish, milk, peanuts, sesame, shellfish, soybeans, tree nuts, and wheat.

Highly refined oils are exempted from federal regulations. Accordingly, even if the oil is derived from one of the major allergen groups, restaurants and food processors are not required to report the ingredient in the list of allergens for the food.

For example, highly refined soybean oil is not considered a common allergen. Many restaurants will still list soy as an allergen in foods prepared or cooked with soybean oil. But, others will not.

Cross Contamination

It’s important for any individuals with food allergies or specific dietary needs to know that restaurants cannot guarantee food safety. Potential allergens are present due to the manner in which foods are prepared.

Factories process multiple food products and fast-food restaurants have limited space for prepping ingredients and serving customers. Appetizers, entrees, side dishes, and drinks are cooked or prepared using shared equipment.

Fried foods, for example, are cooked in common oils. To that end, even if a particular ingredient does not contain specific allergens, foods, beverages, and utensils may come into contact with or contain common allergens due to cross-contamination.
