Ingredients and Allergens in French Fries

While it often seems like french fries are simply potatoes, salt, and oil, there are actually many ingredients used to make fast food fries.

Additives such as disodium dihyrdrogen pryophosphate (an inorganic compound extracted from phosphate rock) and tricalcium phosphate help maintain color and prevent the food from sticking together.

MSG is often used to enhance flavors and potassium chloride enriches foods with potassium. The latter is a metal halide salt of potassium and chlorine.

Monosodium Glutamate (or sodium glutamate), frequently known as simply MSG, is the sodium salt of glutamic acid. Glutamic acid is an amino acid that forms protein found naturally in animal (including humans) and plant proteins.

It’s a key component in seaweed extract, the origin of producing monosodium glutamate as a flavor enhancer in foods.

MSG is produced through the fermentation and neutralization of glutamic acid found in plant-based products such as corn, sugar cane, or sugar beets.

Potassium chloride is a metal halide salt (a compound of metals and halogens) of potassium and chlorine. It’s extracted from earth minerals, ocean water, or lake brines. Food processors often use the additive as an alternative (or in addition) to salt to enrich frozen meals, potato chips, and cereal, among other foods with potassium.
