Panera Allergen Menu FAQs

Here is a list of additional resources and current information for frequently asked questions about food allergens at the Panera Bread quick service restaurant chain.

Certain menu items, including the chocolate coconut macaroon and coconut macaroon cookies, contain peanuts. Select baked goods, salads, and spreads do contain tree nuts.

In addition, food items are prepared in a shared facility where other foods that contain nuts are cooked and/or prepared. As a result, menu items may contain or come into contact with peanuts due to cross contamination.

Highly refined oils are exempted from federal regulations. Accordingly, even if the oil is derived from one of the major allergen groups, restaurants and food processors are not required to call out the ingredient as a common allergen in the food product.

For example, highly refined soybean oil is not considered a common allergen. Restaurants may still list soy as a potential allergen in foods prepared with soybean oil, but many do not.

Summary of Food Allergen Guidelines

Federal regulations have identified nine major food allergens: eggs, fish, milk, peanuts, sesame, shellfish, soybeans, tree nuts, and wheat.

Highly refined oils are exempted from federal regulations, even if the oil is derived from one of the major allergen groups such as soybeans.

It’s important for any individuals with food allergies or specific dietary needs to know that restaurants cannot guarantee food safety. Potential allergens may be present due to how foods are prepared.

Fast food restaurants have limited space. As such, foods and beverages are prepared using shared equipment. Fried foods, for example, are cooked in common oils in a shared fryer.

So even if a specific ingredient or meal does not contain specific allergens, foods, beverages, and utensils may come into contact with or contain common allergens due to cross contamination.

    1. Carrageenan is not listed as an ingredient in Panera’s plain bagels. The bagels do contain sorbitan monostearate, an additive commonly used as an emulsifier (like carrageenan) and to enhance the activation of yeast.
      Plain bagel ingredients include:
      Enriched Flour (Wheat Flour, Malted Barley Flour, Niacin, Reduced Iron, Thiamine Mononitrate, Riboflavin, Corn Enzyme, Folic Acid), Water, Brown Sugar, Salt, Dough Improver (Malted Wheat Flour, Enriched Flour [Wheat Flour, Niacin, Reduced Iron,Thiamine Mononitrate, Riboflavin, Folic Acid], Deactivated Yeast, Ascorbic Acid, Microbial Enzymes), and Yeast (Yeast, Sorbitan Monostearate, Ascorbic Acid).
