What is Sodium Acid Pyrophosphate?

Sodium Acid Pryophosphate (sometimes referred to as SAPP) is an inorganic water-soluble compound comprised of sodium cations and pyrophosphate anion.

The raw material in phosphates is phosphoric acid.  SAPP is created through a manufactured process of neutralizing phosphoric acid with sodium hydroxide or sodium carbonate.

The result is monosodium phosphate.  Dehydrated monosodium phosphate is SAPP.

It is commonly used in the food industry as a leavening acid in breads and other baked goods.  The additive produces gas and increases the volume of dough.  Because of this property, it’s an important additive in self-rising flour and baking powder.

Descriptions of Select Ingredients

  • Annatto Extract, an orange-red condiment and food coloring, is derived from seeds of achiote (Bixa Orellana) tree used to add color to food items.
  • Capsicum Oleoresin is a type of oily extract of pepper plants.
  • Monocalcium Phosphate, an inorganic compound, is used as a leavening acid to react with baking soda and provide aeration and volume.
  • Sodium Bicarbonate is a chemical compound of salt and bicarbonate anion. It is generally well known as baking soda.
  • Thiamin Mononitrate is the nitrate salt form of Vitamin B1.
  • Xanthan Gum is a polysaccharide used in the food industry as an emulsifier, thickening agent, and stabilizer.
