What is Sodium Citrate?

Sodium citrate is the sodium salt of citric acid.  It’s a mild alkali that is often used to regulate acidity during the production of certain foods.  This additive is also used as an emulsifier for oils.

For example, it prevents cheese from becoming greasy when melted.  The reason it works is because the sodium acts as a substitute for the calcium that would otherwise help the cheese proteins bind.  When cheese is heated, proteins separate.
