What is Sodium Nitrate?

Sodium nitrate is a type of curing salt through a process of neutralizing nitric acid with sodium carbonate, sodium bicarbonate, or sodium hydroxide.  Nitrate slowly breaks down into nitrite, which is useful as a color stabilizer.

Sodium nitrate is commonly used as an antioxidant in processed meats, including bacon, ham, deli meats, and hot dogs.
