What is Sodium Benzoate?

Sodium Benzoate is the sodium salt of benzoic acid. It's often used in the food processing industry as a preservative due to its antifungal and antibacterial properties. The additive inhibits the growth of bacteria, yeast, and mold. Various packaged foods such as jam, olives, canned vegetables, pickles, and beer contain sodium benzoate. Taco Bell's creamy jalapeno sauce contains sodium benzoate.
