What is Dimethylpolysiloxane?

Also known as polydimethylsiloxane (PDMS) or dimethicone, dimethylpolysiloxane is a silicone polymer.  It’s used in manufacturing processes across various industries, including cosmetics, food, and industrial uses. Dimethylpolysiloxane is listed as an ingredient in the cooking oil used for the chicken nuggets.

This additive is often used in the production of fried foods.  It reduces surface tension and helps prevent a foaming reaction when frying at high temperatures.  The benefit is that it lessens the risk of burns caused by splattering or bubbling oil when food is placed into a fryer.

In addition to fried foods, dimethylpolysiloxane is also used as an anticaking agent in confectionary products and baked goods.
