Sodium Alginate is the sodium salt form of alginic acid (a natural polysaccharide). It’s extracted from brown algae and forms a viscous gum when hydrated and combined with calcium.
It’s used in food production as a thickening agent. You may find that sodium alginate often used in ice cream, salad dressings, instant noodles, baked goods, and jellies.

What Do You Think of Impossible Food Products?
My Personal Opinion
The Impossible Slider is not my favorite burger-type sandwich. I’m simply not a fan of eating something that’s engineered to taste like something else.
I would prefer to eat nicely seasoned grilled vegetables that taste like vegetables.
And, if I want to enjoy a cheeseburger for lunch or dinner, I would simply order a cheeseburger. Other than for taste-testing purposes, I would not bother ordering a plant-based burger(ish) sandwich.
In terms of flavor, in my opinion, the Impossible product, will never beat a flame-grilled fresh meat patty.
That said, I fully understand and respect that there are many people who follow a diet without red meat as well as others who exclude all foods made with animal products. So we would love to hear from others who have tasted this sandwich.

Soy Leghemoglobin
What do you think of the ingredient Soy Leghemoglobin? From what I’ve read, it’s not something I want to eat. The main reason I feel that way is because it’s a genetically engineered ingredient. And again, it’s used to try to make one thing taste like another thing. When I followed a vegetarian diet (many years ago, for 5+ years), I tried the veggie burgers that were all the rage. I always preferred to simply eat mushrooms that tasted like mushrooms.
Forbes published an article that stated Soy Leghemoglobin is a genetically engineered ingredient. They go on to describe in simple terms how the ingredient is processed. Soy Leghemoglobin DNA is inserted into yeast that is fermented and then added to the Impossible burgers. The FDA approved the use of this ingredient as a color additive.
